American Idol Mania




I have to say that I still cannot get enough of American Idol and it is almost over! I have known that it would all boil down to the Davids, and the whole state of Utah definitely has Archuleta fever! I am torn between the two but I think that I could definitely buy either album and be happy with it-they will both be recording no matter who wins. That said, guess who my pick is?

This is the first year Mel and I actually watched the whole season. I love the david's! My choice is actually David Cook. I like what he does to change the songs. David A. is also very good. How will win? That is the question.

I love David A's voice but I think David C. is the better performer. I was so torn tonight. David A totally outsang, but David C. is just so tender yet tough. Sigh...

Anne, I have a recipe for you but can't find your email so here it is..

Blackberry Pie Bars (I use Raspberries) It is SO good!

Crust & Topping
3 cups all purpose flour
1 1/2 cups sugar
1/4 teaspoon salt
1 1/2 cups chilled unsalted butter

Fruit Filling
4 large eggs
2 cups sugar
1 cup sour cream
3/4 cup all purpose flour
Pinch of salt
2 (16-ounce) packages frozen blackberries, defrosted and drained

For the crust and topping:
Preheat the oven to 350F. Grease a 9x13-inch baking pan.

Combine the flour, sugar and salt in a food processor fitted with the metal blade. Process until fully combined. Cut the butter into 1/2-inch cubes. Add the butter to the flour mixture and process until the butter is evenly distributed, but the mixture is still crumbly.

Reserve 1 1/2 cups of the crumb mixture for the topping. Press the remaining crumbs into the bottom of the prepared pan. Bake the crust for 12-15 minutes, or until it is golden brown. Cool for at least 10 minutes.

To make the filling:
Whisk the eggs and sugar together in a large bowl, then add the sour cream, flour and salt. Gently fold in the blackberries. Spoon the mixture evenly over the crust. Sprinkle the reserved crumbs evenly over the top. Bake for 45 to 55 minutes, or until the crust is lightly browned. Cool for at least 1 hour before cutting.

Makes approximately 2 dozen bars.
